London Broil with Red Wine and Shallot Sauce

1 flank steak
Soy sauce
Salt
Pepper
Thyme
1 1/4 c. chopped shallots
1 1/4 c. red wine
1 stick butter
2 tbsp. parsley
Brush flank steak with soy sauce, salt, pepper and thyme. Marinate for 1 hour. Brush again and grill over fire 4-5 minutes each side for rare or broil in oven broiler.
Combine shallots, wine and bring to a boil. Add butter. Salt to taste. Stir until butter is melted. Add parsley and spoon over steak.
Notes:
We decided to go with the old faithful garlic mashed potatoes with cheddar cheese, and broccoli as our veggie. We ate with a simple bottle of Yellowtail Merlot, and it was fantastic. As a side note, we used green scallions instead of shallots, fresh parsley and dried thyme.
